Triple Cheese Bread by Hand

3/4 cup hot water (120* to 130*)

3 cups bread flour

2 tablespoons sugar

1 1/2 teaspoons salt

2 tablespoons butter, softened

1/2 cup shredded WSwiss Cheese

1/2 cup creamed cottage cheese

3 tablespoons grated Parmesan cheese

2 teaspoons quick-acting active dry yeast

OR

3 teaspoons regular active dry yeast

Instructions: Mix 1 cup of the flour, the sugar, salt, margarine and yeast in medium bowl. Add 3/4 hot water. Beat on low speed 30 seconds, scraping bowl constantly. Beat on medium speed 1 minute, scraping bowl occasionally. Beat in cheeses. Stir in enough of the remaining flour to make dough easy to handle. Turn onto lightly floured surface. Knead about 8 minutes or until elastic. Place in greased bowl; turn greased side up. Cover and let rise in warm place 45 to 60 minutes or until double. (If using quick-acting yeast, cover and let rest 10 minutes instead of rising.) Grease loaf pan. Punch down dough and shape into loaf. Place in pan; brush lightly with softened margarine. Cover and let rise in warm place 45 to 60 minutes or until double. Place oven rack in lowest position. Heat oven to 425*. Bake 25 to 30 minutes or until loaf sounds hollow when tapped; remove from pan. Cool on wire rack.
