Barbara Tolleson's Beef Enchilada Casserole

1 pound ground beef

1/2 medium-sized onion, chopped

6 corn tortilla, torn into bite-sized pieces

1 can cream of mushroom soup

1 can cream of chicken soup

1 can Ro-Tel tomatoes

1 ounce cheddar cheese, grated

Instructions: Brown meat and onion together. Drain fat. Add soups, tortillas, and tomatoes, and mix.

Pour into a casserole dish.

Bake at 375* for 35 to 40 minutes. Immediately after removing from oven, sprinkle cheese over top and let cheese melt.
