1 8 oz. can pitted dark sweet cherries in light syrup, undrained
1 package (4-serving size)Cherry flavor
sugar free gelatin
3/4 cup boiling water
Ice cubes
2 tablespoons chopped toasted almonds
1 cup Cool Whip LiteŽ, thawed
Instructions: Drain cherries, reserving syrup. If necessary, add enough water to reserved syrup to measure 1/2 cup. Cut cherries into quarters. Completely dissolve gelatin in boiling water. Combine measured syrup and enough ice to measure 1 1/4 cups. Add to gelatin; stir until slightly thickened. Remove any unmelted ice. Chill until thickened. Measure 1 1/4 cups gelatin; stir in half of the cherries and nuts. Set aside. Gently stir whipped topping into remaining gelatin. Add the remaining cherries and nuts; spoon into 6 dessert glasses. Chill until set but not firm, about 15 minutes. Top with clear gelatin mixture. Chill until set, about 1 hour.
Makes about 3 cups or 6 servings.
