3 cups cooked elbow macaroni
3 cups cooked chicken, cubed
2 cups fresh peaches, peeled & cubed
1 cup celery, sliced
1 cup strawberries, halved
1 11oz can mandarin oranges, drained
1 8oz can pineapple tidbits, drained
1 8oz can sliced water chestnuts, drained
1/2 cup apple, chopped
1/2 cup golden raisins
1/2 cup pecans, chopped
1 cup mayonnaise
1/4 cup orange juice
2 tablespoons sugar
1/2 teaspoon ground ginger
1/8 teaspoon pepper
Shredded lettuce
Instructions: In a large bowl, combine the first 11 ingredients. In a small bowl, combine the mayonnaise, orange juice, sugar, ginger and pepper; pour over salad and toss to coat. Serve on a bed of lettuce.
