2 1/2 cups cooked chicken breast, minced
3 tablespoons onion, finely chopped
3 tablespoons celery, finely chopped
2 tablespoons carrot, finely chopped
2 tablespoons dry bread crumbs
1 egg white
1/2 teaspoon poultry seasoning
pinch pepper
Instructions: In a bowl, combine all ingredients; mix well. Shape into 3/4-in. balls; place on a baking sheet that has been coated with nonstick cooking spray. Bake at 400* for 8-10 minutes or until lightly browned. Yield: 2-1/2 dozen.
