Chilled Raspberry Parfaits

2 cups fresh or frozen raspberries, thawed

1/2 cup peach or apricot nectar

1 envelope unflavored gelatin

1 teaspoon lemon juice

4 packets Equal or 1 1/4 tsp. Equal Measure

1 5 0z can evaporated milk, chilled icy cold

1 cup fresh or frozen raspberries

Fresh raspberries, optional

Instructions: In a blender container or food processor bowl combine the 2 cups of berries and the nectar. Cover and blend or process till smooth. Sieve to remove seeds. Combine about 1/3 cup of the puree in saucepan with gelatin; let stand 5 minutes, then heat and stir till gelatin is dissolved. Remove from heat; stir in lemon juice, Equal and remaining puree. Place in a large mixer bowl.

In chilled small mixer bowl beat evaporated milk till soft peaks form and mixture triples in volume. Gradually fold in gelatin mixture. Gently fold into the 1 cup whole berries. Turn into parfait glasses over a layer of fresh raspberries, if desired. Cover and chill 4 to 8 hours. Garnish with additional raspberries, if desired.
