1 1/2 pounds fresh green beans
1/2 cup onion, finely chopped
2 tablespoons butter or margarine
3 tablespoons lemon juice
1 tablespoon fresh parsley, chopped
1 teaspoon salt, optional
1 1/2 teaspoons chopped fresh thyme or 1/2 tsp dried thyme
1/4 teaspoon paprika
Instructions: In a saucepan, cover beans with water; cook until crisp-tender. Meanwhile,in a skillet, saute the onion in butter until tender. Add the lemon juice, parsley, salt if desired, thyme and paprika. Drain beans; add herb butter and stir to coat. Serve immediately.
