Puffy Apple Omelet

3 tablespoons all-purpose flour

1/4 teaspoon baking powder

1/8 teaspoon salt, optional

2 eggs, separate out yolks

3 tablespoons milk

3 tablespoons sugar

1 tablespoon lemon juice


1 large baking apple, thinly sliced

1 teaspoon sugar

1/4 teaspoon ground cinnamon

Instructions: In a small bowl, combine flour, baking powder and salt if desired; mix well. Add egg yolks and milk; mix well and set aside. In a small mixing bowl, beat egg whites until foamy. Gradually add sugar, beating until stiff peaks form. Fold in yolk mixture and lemon juice. Pour into a greased 1-1/2 qt shallow baking dish. Arrange apple slices on top. Combine sugar and cinnamon; sprinkle over all. Bake, uncovered, at 375* for 18-20 minutes or until a knife inserted near the center comes out clean. Serve immediately.
