Sparkling Berry Salad

2 cups cranberry juice

2 packages (4-serving size each) or 1 package (8-

serving size) sugar free gelatin, any red flavor

1 1/2 cups cold club soda

1/4 cup creme de cassis liqueur

1 teaspoon lemon juice

1 cup raspberries

1 cup blueberries

1/2 cup strawberries, sliced

1/2 cup whole strawberries, cut into fans

Instructions: Bring cranberry juice to a boil in medium saucepan. Completely dissolve gelatin in boiling cranberry juice. Stir in club soda, liqueur and lemon juice. Chill until slightly thickened. Reserve a few raspberries and blueberries for garnish, if desired. Stir remaining raspberries, blueberries and the sliced strawberries into gelatin mixture. Spoon into 6-cup mold which has been lightly sprayed with non-stick cooking spray. Chill until firm, about 4 hours. Unmold. Surround with reserved berries and the strawberry fans.

Variation: Omit creme de cassis liqueur. Increase cranberry juice to 2 1/4 cups.
