Sugarless Applesauce Cake

1 cup raisins

1 cup diced dried fruit

2 cups water

2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon ground nutmeg

1 1/2 teaspoons ground cinnamon

egg substitute equivalent to 2 eggs

1 cup unsweetened applesauce

2 tablespoons liquid sweetener

3/4 cup vegetable oil

1 teaspoon vanilla

1/2 cup chopped nuts

Instructions: Combine raisins, fruit and water in a saucepan; cook, uncovered, until water is evaporated and fruit is soft. Set aside to cool. Meanwhile, in a mixing bowl, combine flour, baking soda, salt, nutmeg and cinnamon. In another bowl, combine egg substitute, applesauce, sweetener, oil and vanilla. Add nuts and reserved fruit mixture. Stir into dry ingredients and blend thoroughly. Pour into a greased 10-in. fluted tube pan. Bake at 350* for 35-40 minutes or until the cake tests done.
