Sunset Yogurt Salad

2 packages (4-serving size) or 1 package (8- serving

size) orange or lemon sugar free gelatin

2 cups boiling water

1 8 oz. carton plain lowfat yogurt

1/4 cup cold water

1 8 oz. can crushed pineapple in unsweetened juice, undrained

1 cup shredded carrots

Instructions: Completely dissolve gelatin in boiling water. Measure 1 cup gelatin into medium mixing bowl; chill until slightly thickened. Stir in yogurt. Pour into medium serving bowl. Chill until set but not firm. Add cold water to the remaining gelatin. Stir in pineapple and carrots. Chill until slightly thickened. Spoon over gelatin-yogurt mixture in bowl. Chill until firm, about 4 hours. Garnish if desired. Makes 5 cups or 10 servings.
