Three Pepper Salad

2 packages (4-serving size) or 1 package (8-serving

size) lemon sugar free gelatin

2 cups boiling water

1 1/2 cups cold water

2 tablespoons lemon juice

2 cups chopped red, green and/or yellow peppers

2 tablespoons sliced green onions

Instructions: Completely dissolve gelatin in boiling water. Stir in cold water and lemon juice. Chill until slightly thickened. Stir in peppers and green onions. Pour into 5-cup mold which has been lightly sprayed with nonstick cooking spray. Chill until firm, about 4 hours. Unmold.
