Tortellini Soup

1 medium onion, chopped

1 clove garlic, minced

2 14-1/2oz can chicken broth

1 8 oz pkg cheese tortellini

1 14-1/2oz can Italian stewed tomatoes

2 10 oz pkg frozen chopped spinach, thawed & drained

Instructions: In a large saucepan coated with nonstick cooking spray, saute the onion and garlic until tender. Add broth; bring to a boil. Add tortellini; reduce heat. Simmer for 10 minutes or until the tortellini is tender. Stir in the tomatoes and spinach; heat through. Serve immediately.
