Vanilla Pudding Grahamwiches

1 1/2 cups cold skim milk

1 package (4-serving size) vanilla fat free

sugar free instant pudding mix

3 1/4 cups (8 oz) Cool Whip Lite, thawed

1 cup miniature marshmallows

22 whole cinnamon graham crackers broken

into 44 squares

2 squares (2 oz) Baker's Semi-Sweet Chocolate, grated

Instructions: Pour milk into large mixing bowl. Add pudding mix. Beat with wire whisk 2 minutes. Gently stir in whipped topping and marshmallows. For each sandwich, spread about 2 tablespoons of the pudding mixture onto each of 2 graham cracker squares. Lightly press graham crackers together to form sandwich. Repeat with the remaining graham crackers and pudding mixture. Press edges of each sandwich into chocolate to coat. Wrap each sandwich with plastic wrap. Freeze until firm, about 6 hours or overnight. Remove grahamwiches from freezer about 5 minutes before serving. Let stand at room temperature to soften slightly. Makes 22 sandwiches.
