Peach Gelatin Dessert

1 (20 oz) can unsweetened crushed pineapple, undrained

1 cup water

1 (6 oz) package peach gelatin

4 tablespoons sugar, divided

2 cups fresh peaches, peeled and chopped

1 cup buttermilk

1 (12 oz) carton frozen whipped topping, thawed

Instructions: In a saucepan, combine pineapple, water, gelatin powder and 2 tablespoons sugar. Cook and stir over medium heat just until mixture comes to a boil. Pour into a large bowl. Refrigerate until mixture begins to thicken, about 45 minutes. In a bowl, combine peaches, buttermilk and remaining sugar; fold in whipped topping. Fold into gelatin mixture. Pour into a 13x9x2-in. dish. Refrigerate until firm.
