Wild Turkey Soup

turkey carcass

onion

salt

celery

small white beans

1 tablespoon Rosemary

Instructions: Simmer turkey carcass in water to cover, with onion, salt and celery until done.

Remove skin and bones, then add small white beans, meat and rosemary to liquid.

Simmer gently until beans are tender.

Serve in large bowls with corn bread and a green salad.
