Alfredo (Chicken & Broccoli or Shrimp)

1/2 of a 16 oz. pkg linguine

1 cup fresh or frozen broccoli flowerets, optional

2 tablespoons butter or cooking oil

1 pound skinless, boneless chicken, cut into 1 1/2" pieces

1 10 3/4 oz can cream of mushroom soup

1/2 cup milk

1/2 cup grated Parmesan cheese

1/4 teaspoon cayenne pepper

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Instructions: Prepare linguine according to package directions in 3 qt. saucepan. Add broccoli during last 4 min. of cooking time. Drain linguine and broccoli well in colander.

Heat butter or cooking oil in 10" skillet over med-high heat. Season chicken with salt, cayenne pepper, garlic and onion powder. Add chicken and cook until well browned, stirring often.

Stir soup, milk, cheese, cayenne pepper, garlic and onion powder. Stir and heat until hot and bubbling.

Add to linguine. Stir to mix.

Serve with additional Parmesan cheese.

Note: Grilled Chicken & Broccoli Alfredo: Subsitute grilled chicken, cut in chunks for boneless, skinless chicken.

Shrimp & Broccoli Alfredo: Substitute 1 lb. fress extra large shrimp, shelled and devined, for the chicken. Cook until shrimp turn pink.
