2 links (6 oz) Andouille or smoked sausage, sliced

1 onion, quartered and sliced

2 small bell peppers, sliced

8 ounces chicken, cut in small cubes

1 box Cajun Red Bean & Rice

4 cups water

3 scallions, sliced; optional

Instructions: Heat a large skillet over medium heat.

Add sausage and onion; cover and cook 3 minutes, stirring occasionally, until sausage is lightly browned.

Add peppers; saute 2 minutes. Add chicken; saute 1 minute. Stir in rice mix and water; bring to a boil.

Cover and cook 7 minutes or until rice is tender and chicken is cooked through.

Remove from heat; stir in scallions, if desired.

Serve with your favorite hot sauce.

Background: Note: A box of Dirty Rice mix and a can of pinto beans can be used in the place of the Red Beans and Rice.
