Crockpot Pork and Veggies

3 large potatoes, peeled and thinly sliced

1 large onion, thinly sliced

1/2 pound baby carrots, peeled

3 to 4 pound boneless pork loin roast

1 (1 oz) package dry onion soup mix

1 teaspoon salt

1/2 teaspoon pepper

garlic powder to taste

1/2 cup water or chicken broth

Instructions: Layer vegetables in bottom of 3 1/2 to 5 quart crockpot.

Place roast on top of vegetables. Sprinkle with soup mix, salt, pepper, and garlic powder. Pour water or broth over top.

Cover and cook on low for 8 to 10 hours (high: 4 to 5 hours).
