Five-Bean and Sausage Soup

1 large onion, chopped

1 large green bell pepper, chopped

4 to 5 cloves garlic, minced

2 tablespoons olive oil

1 (15 oz) can chopped tomatoes with chilies

1 (15 oz) can of each of the following beans with their liquid:

pinto beans

black beans

cannellini beans (aka white kidney beans)

dark red kidney beans

great northern beans

1/2 teaspoon or mor Cajun seasoning

1 pound smoked sausage, thinly sliced

cooked rice

Instructions: Saute the onion, bell pepper and garlic in olive oil until tender in a large pot, 4 quarts or more.

Add tomatoes and all beans with their liquid.

Stir in Cajun seasoning.

Cover and simmer for about 20 minutes.

Stir in sliced sausage and simmer for about 10 more minutes.

Serve over rice.
