1 6 oz package frozen crabmeat OR shrimp, thawed & drained
OR
1 6 1/2 oz can tuna, drained
1 cup shredded sharp American cheese
1 3 oz package cream cheese, cut into 1/4" cubes
1/4 cup sliced green onions
1 2 oz jar chopped piniento, drained, if desired
2 cups milk
1 cup Bisquick® baking mix
4 eggs
3/4 teaspoon salt
dash of nutmeg
Instructions: Heat oven to 400 degrees. Grease pie plate. Mix crabmeat (or shrimp or tuna), cheeses, onions and pimiento in plate.
Beat remaining ingredients until smooth. Pour into plate.
Bake until knife inserted between center and edge comes out clean, 35 to 40 minutes. Cool 5 minutes.

Background: Note: 1 can (6 ounces) crabmeat, drained and cartilage removed, or 1 can (4 1/2 ounces) shrimp, well rinsed and drained, can be substituted for the frozen crabmeat or shrimp.
High Altitude (3500 to 6500 feet): Bake 45 to 50 minutes.
