5 medium potatoes

3/4 cup butter

1/2 cup Parmesan cheese

1 cup Italian bread crumbs

1/2 cup onion, finely chopped

Instructions: Preheat oven to 325*.

Peel and dice potatoes into 1-1/2 inch cubes. Melt 1/2 cup butter. cool and pour into a plastic bag. Add potatoes, bread crumbs and onions. Shake until potatoes are evenly coated. Line a 14x10-inch pan with foil. Pour potatoes evenly into pan. Dot with remaining 1/4 cup butter over potatoes. Sprinkle with Parmesan cheese, salt and pepper. Bake, uncovered, until potatoes are soft.
