1 graham cracker pie crust, 9 inch
1 8 oz can unsweetened crushed pineapple, undrained
1 3.4 oz package instant lemon pudding mix
1 8 oz container lemon chiffon or lemon nonfat or lowfat yogurt
1 teaspoon lemon peel
1 tablespoon fresh lemon juice
1 cup frozen whipped topping, thawed
Instructions: Stir together pineapple (with juice), yogurt, pudding mix, lemon peel and lemon juice. Stir in whipped topping just until blended. Pour into pie crust.
Refrigerate at least 1 hour. Garnish with additional whipped topping and canned pineapple slices, if desired.
