Moist Nut Bread

3 1/3 cups self-rising flour

3 cups sugar

2 teaspoons baking soda

1 teaspoon cinnamon

4 eggs

2 (6 oz) jars strained apricot baby food

1 cup cooking oil

2/3 cup water

1 tablespoon vanilla

1 cup nuts, chopped

Instructions: Preheat oven to 350*F. Spray two 9x5x3-in loaf pans.

In a large bowl, combine dry ingredients.

In another bowl, combine eggs, baby food, oil, water and vanilla. Stir into dry ingredients; mix until well blended.

Stir in nuts.

Pour into pans.

Bake at 350* for 50-60 minutes or until a toothpick inserted near the center comes out clean.

Cool in pans for 15 minutes before removing to a wire rack to cool completely.
