1/3 cup cornmeal

1/3 cup self-rising flour

2 teaspoons sugar

1 egg

1 1/2 teaspoons baking powder

1/3 cup milk

Instructions: Mix cornmeal, flour, sugar and baking powder in small bowl.

Add egg and milk; mix until smooth.

Heat oil in omelet pan; pour cornbread mixture in one side of omelet pan.

Close lid and cook on low heat until formed. Close lid and flip. Cook until that side is golden brown.
