One-Pan Banana Bread

1/3 cup vegetable oil

1 1/2 cups mashed bananas (about 4 medium-sized bananas)

1/2 teaspoon vanilla

3 eggs

2 1/3 cups biscuit baking mix

1 cup sugar

1/2 cup chopped walnuts

Instructions: Preheat the oven to 350*. Generously grease the bottom of a 9"x5" loaf pan. Place all the ingredients in the pan and stir with a fork until moistened; beat vigorously for 1 minute. Bake for 55 to 65 minutes or until a wooden toothpick inserted in the center comes out clean. Cool for 5 minutes. Run a knife or metal spatula around the sides of the loaf, pressing gently to loosen; remove the loaf from the pan. cool slightly before slicing.
