3 tablespoons soft shortening

2 unbeaten eggs

3/4 cup crushed pineapple

1 teaspoon vanilla

1 cup sugar

2 cups self-rising flour

3/4 cup red cherries, chopped

Instructions: Cream shortening and sugar well. Add eggs; beat well. Add flour alternately with crushed pineapple. Add vanilla and cherries. Stir quickly and turn into greased loaf pan. Bake at 325* for 1 hour. Slice when cold.
