Quick Buttermilk Sweet Dough

2 packages yeast

1/2 cup warm water

1 1/4 cups buttermilk

1/2 cup oleo, softened

1/2 cup sugar

5 1/2 to 6 cups self-rising flour

Instructions: In a large bowl, dissolve yeast in warm water. Add buttermilk, eggs, 2 1/2 cup flour, the butter and sugar. Blend 1/2 minute on low speed, scraping bowl constantly. Beat 2 minutes on medium speed, craping bowl occasionally. Stir in enough remaining flour to make dough easy to handle.(Dough should remain soft and slightly sticky.)

Turn dough onto well-floured board; knead 5 minutes or about 200 turns. Shape dough immediately (no need to let rise) into desired rolls.

Cover and let rise in warm place until double, about 1 hour. Heat oven to 375*.



Background: Note: Makes two pans of cinnamon rolls. Half dough; roll each half into rectangle; mix cinnamon, sugar and melted butter together and spread on dough. Roll up and cut into rolls.
