Roasted Chicken with Rice

2 1/2 to 3 lb. chicken

1/2 cup celery, chopped

1/2 cup onion, chopped

1/2 cup bell pepper, chopped

salt, pepper and garlic powder to taste

2 cups cooked rice

Instructions: Preheat oven to 350*. Put salt, pepper and garlic powder on and in chicken. Mix celery, onion and bell pepper together and place in chicken. Wrap chicken in foil and put in 13x9-inch baking pan. Cook in oven for 1 hour. Take chicken out, unwrap and empty onion, celery and bell pepper into foil. Set chicken aside. Add rice to onion, celery and bell pepper; seal foil; put in oven for 10-15 minutes. Serve with chicken.
