1 pound vension burger
OR smoked sausage OR some of both
1 tablespoon oil
1 onion, chopped
1 small bell pepper, seeded and chopped
1 rib celery, chopped
1 to 2 teaspoons Cajun seasoning
1 bay leaf
1 14 1/2 oz can diced tomatoes with mild green chiles
2 cups chicken broth
1 1/2 cups long-grain rice
1 1/2 cups water
Instructions: Heat Dutch oven over medium heat. Add oil, then burger, onion, pepper, and celery.
Cook, stirring, for 5 minutes or until burger is no longer pink. Stir in seasoning and bay leaf; cook 1 more minute.
Add tomatoes, broth, rice and water; bring to a boil, then cover, reduce heat to medium-low and simmer 20 minutes or until rice is tender and liquid is absorbed.
Remove bay leaf.
